Creamy Ranch Smashed Potato Salad

Creamy Ranch Smashed Potato Salad

A crispy twist on the classic picnic salad, this easy smashed potato salad gets its unique texture in the air fryer. Our original no-seed-oil ranch dressing mixed with mayo and mustard makes the perfect creamy, dreamy ranch potato salad without any dairy ingredients.

Ingredients:

  • 2 lbs baby potatoes, scrubbed
  • Spray Oil
  • 2/3 cup Primal Kitchen Ranch Dressing
  • 1/3 cup Primal Kitchen Mayo
  • 1.5 tsp Dijon Mustard
  • Salt and pepper, to taste
  • 1 medium cucumber
  • 3/4 tsp garlic, minced
  • 2 green onions, diced
  • 6 slices cooked bacon, crumbled

Directions:

  1. Preheat your air fryer to 400°F.
  2. Spritz potatoes with Air Fryer Oil. Add potatoes to the air fryer basket in a single layer (cook multiple batches as needed).
  3. Air-fry each batch for 18–20 minutes, turning halfway. Transfer cooked potatoes to a cutting board and use the back of a glass to gently smash them down. Set aside to cool.
  4. Cut the cucumber in half and use a spoon or melon baller to scoop out the seeds. Dice into small pieces.
  5. Add Ranch Dressing, mayo and mustard to a medium-size bowl and whisk to combine. Mix in chopped cucumber and minced garlic. Add salt and pepper to taste.
  6. Gently fold the cooled potatoes into the salad until they are completely coated. Garnish with green onions and bacon crumbles. Chill and serve!

Loaded Carnivore Fries

This copycat version of a popular burger chain’s saucy fries is made with Primal Kitchen Special Sauce—no artificial sweeteners, seed oils or drive-thru regret. In addition to the grilled onions and cheese, we topped our crispy fries with beef for a carnivore’s dream snack or side dish.

Ingredients:

  • 1 package of frozen french fries (about 28 oz)
  • ½ lb ground beef
  • Salt and pepper, to taste
  • Avocado oil or olive oil
  • ½ small onion, diced
  • 4 slices of American cheese
  • Primal Kitchen Special Sauce, for drizzling

Directions:

  1. Cook the fries: Follow the package directions to cook your fries from frozen. (Or make your own, coat with spray oil and air-fry at 400°F for about 10–15 minutes until crispy).
  2. Cook the beef: In the meantime, heat a griddle or pan to medium-high. Add ground beef and smash it flat. Season with salt and pepper. Use a spatula to break the beef up into sections (or crumbles, if preferred). Cook for 3–5 minutes per side, flipping halfway.
  3. Caramelize your onions: Dice the onion into small pieces. Add to the heated grill with a little avocado oil and stir frequently until the onions turn clear. Continue browning a bit longer until fully caramelized.
  4. Assemble: Once the fries are done cooking, top with the ground beef. Add cheese slices in a single layer. Spoon onions over the top. Drizzle with Primal Kitchen Special Sauce and serve. Enjoy!
