Buttermilk Adds Flavor & Texture: Substitute 1 cup buttermilk in place of 1 cup milk, reduce the amount of baking powder by 2 tsp & replace with 1/2 tsp of baking soda. The combination of buttermilk and baking soda acts as a rising agent to create a lighter texture. Buttermilk can also be used as a soup or salad dressing base, or in place of milk when dipping meat, poultry and fish before coating for frying or baking.
