Directions This package will properly season 50 lbs. shrimp, 40 lbs. crawfish or 1 hamper (4-5 dozen) crabs. 1. Place 6 gallons of water or enough to cover seafood and contents of package into large cooking container (60-72 qt), stir, and bring to rolling boil. Add seafood to boiling mixture, stir, cover tightly and return to boil. 2. Cook for the time shown in the table. Turn off heat and soak for the time shown in the table. 3. Cool hot mixture by adding ice This will stop the cooking. Allow to soak until desired flavor. Crawfish: 2 min. cook time; 15-20 min. hot soak time; 15-20 min zesty cool time; Crabs: 5 min. cook time; 15-20 min. Hot soak time; 15-20 min. zesty cool time; Shrimp: 1 min. cook time; 2-5 min hot soak time; 2-5 zesty cool time. Tips: 1. For smaller quantities of seafood use 1-cup Zatarain's Extra Spicy Crab Boil with 6-8 lbs. shrimp, 5-6 lbs. crawfish or 1 dozen crabs. 2. For extra zesty flavor, try adding Zatarian's Liquid Crab Boil and/or Zatarain's Cayenne pepper.
