Directions Preparation: 1. Place contents of crumbled matzo packet in a mixing bowl. Add 16 oz cold tap water to cover. Hold for 30 seconds to soften crumbled matzos; drain & discard excess water. 2. Beat 4 large eggs in a mixing bowl. Stir in contents of seasoning packet, mixing well. 3. Combine softened crumbled matzos and egg mixture. Stir until coated well. 4. Heat 1/4 cup vegetable oil (olive oil preferred) in a large skillet over medium heat. 5. Place several generous spoonfuls of matzo & egg mixture into skillet and flatten with a spatula. Cook 1-1/2 minutes per side. 6. Repeat until all matzo & egg mixture is used. Enjoy!
