Directions Pumpkin Morning Glory Muffins: 1 Pkg. Pumpkin Bread Mix; 1/2 cup oil; 2 eggs; 1 cup canned pumpkin; 8 oz can undrained crushed pineapple; 1/2 cup chopped walnuts; 1/2 cup raisins; 1/3 cup shredded coconut (optional). (1) Preheat oven to 350 degrees F; (2) Combine all of the ingredients in a large bowl and stir until blended; (3) Grease or line a muffin tin; (4) Scoop batter into muffin tin, filling the cups 3/4 full; Bake for 22-26 minutes until muffins are done. Makes 16-18 muffins. Tip: To test for doneness insert toothpick into center and remove. If clean, muffins are done! Directions: 1 Pkg. Pumpkin Bread Mix; 1/3 cup water; 1/2 cup oil; 2 eggs; 1 cup canned pumpkin; (1) Preheat oven to 350 degrees F; (2) Combine all ingredients in a large bowl and stir until blended; (3) Pour batter into a greased 8x4 loaf pan; (4) Bake for 50-55 minutes or until a toothpick inserted comes out clean.
