What You Need: 2/3 cup water; 2/3 cup oil, such as mazola corn oil; 2 large eggs. Real Simple Directions: 1. Mix - Preheat oven to 400 degrees F. Line 12 standard-size muffin cups with paper liners or spray with cooking spray; set aside. 2. Spoon - Combine mix, water, oil and eggs in a large mixing bowl with a spoon. Stir until blended, about 40 to 50 strokes. Spoon batter evenly between prepared muffin cups, filling each about two-thirds full. 3. Bake - Bake muffins for 15-17 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack for 5 minutes. Remove from muffin pan and serve. Enjoy! Do not eat raw batter. Quick Bread: Preheat oven to 375 degrees F. Spray a standard 8-1/2 x 4-1/2 inch loaf pan with cooking spray and set aside. Combine mix, water, oil and eggs in a large mixing bowl with a spoon.
