Spicy Chicken with Lime and Cilantro Quinoa
Here’s a meal to jumpstart healthy eating! Spice up some chicken breasts with cayenne pepper, then serve with a zesty side of quinoa with lime and cilantro. Abundant in protein and fiber, this meal will keep you full and give you energy.

- 24 ounces Signature Farms® boneless, skinless chicken breasts
- 1/2 teaspoon kosher salt
- 1/4 teaspoon teaspoon cayenne pepper
- 1 medium onion (diced)
- 1 cup quinoa
- 2 cups Signature SELECT® reduced sodium chicken broth
- zest of 1 lime
- juice of 1/2 lime
- 1/4 cup cilantro leaves (chopped)
Season chicken with salt and cayenne. Heat covered sauté pan over medium heat. Coat the pan lightly with non-stick cooking spray and cook chicken breasts until done (internal temperature of 165º). Remove from heat and cover with aluminum foil.
Add onion to pan and cook until translucent, 3-4 minutes. Add quinoa, chicken broth, and lime zest. Stir to combine and bring to a boil. Reduce heat to low, cover, and simmer 15-20 minutes. Remove from heat.
Slice chicken breasts. Add lime juice and cilantro to quinoa and fluff with fork. Top with chicken breasts.
